Surely the people to ask are the Australian Consulate?
The normal procedure (for recognizing a contract overseas) is either:-
1. Sign it in the consulate; or
2. Sign it locally in front of a notary, get it certified by the competent Hong Kong government authority, then it can be countersigned by the consulate.
do you need a JP, or can a doctor, vet, teacher, policepersondo it for you. there's likely a few of these from Oz that may be able to help... a few beers and they may remember you from 12months ago too

If you dont mind, tell us what you need them for. Quite often the requirements inside of Australia are different when you are outside of Australia.
For example, to get a new Australian passport outside of Australia, you can get ANY other Australian citizen to witness the papers. You do not need someone who matches a specific qualification. Whereas if you are in Australia, the rules are different.
